The world has once again gone hog wild for charcuterie. No longer a necessity for meat preservation, it's now a celebration of the craft, taste and simplicity of cured meats, especially pork. Our Charcuterie Sampler features handcrafted salumi made by our favorite charcutier, Charles Wekselbaum of Charlito’s Cocina. He uses heritage breed, pasture-raised pork and the finest herbs and spices, and then dry-ages all his salumi with fleur de sel.
The Sampler features two salamis: Campo Seco, a straightforward, rustic country sausage. Chorizo, a mildly spicy version made by adding garlic and paprika to the country salami.

· A wedge of aged raw goat’s milk cheese from Eleven Brothers at Boston Post Dairy.
· Organic handmade crackers from Potter’s in Wisconsin.
· A sublime dry fig "salami" made with a mixture of dried black mission figs, Malbec, bourbon and sea salt by Charlito’s Cocina.
