This gift features six handmade raw milk cheeses, each selected to reflect the season’s finest offerings. These cheeses are accompanied by fresh fruit, a cheese knife, balsamic fig chutney, and either whole wheat organic crackers or gluten-free sea salt crackers, depending on the gift you choose.

The Deluxe version includes our Maple Serving Board (12 x 8 inches) milled in Dorset, VT.

This gift features six cheeses:

-Wischago

From Hidden Springs Creamery in Westby, Wisconsin comes a nutty, fruity sheep's milk Manchego style cheese that would make any Spaniard proud. The wheels are coated in wax in the traditional way and aged for 6-7 months. During their maturation, Hidden Springs Wischago develops a rich, meaty flavor that is brightened by notes of fermented fruit and salt.

- Marieke Gouda

As close to candy as cheese can come with a carmel-sweet flavor, Marieke aged Gouda boasts a dense, buttery texture and a pleasant grassy aroma. Cheese maker Marieke Penterman’s Old World recipe is made from raw cows’ milk and brined for 60 hours. She then cures and ages it on Dutch pine planks for 6 to 9 months. Marieke Gouda is the star of Holland’s Family Cheese company in Thorp, Wisconsin. Dutch-born Marieke has made a cheese with deep roots in the Netherlands. It took home the top prize at the 2013 U.S. Championship Cheese contest, and is hailed today as a new American classic.

- Ascutney Mountain

A sweet and nutty cheese, similar to European Alpine cheeses, Ascutney Mountain has a natural rind and a firm, yet creamy texture. It has a deep yellow hue with tiny holes scattered throughout its interior. It is made from raw and rich Jersey cows’ milk from cows that graze on the site of the sustainable agriculture community of Cobb Hill, Vermont. Ascutney Mountain ages 8-10 months to develop its intriguing nature. Developed from a Swiss Appenzeller recipe, Gail Holmes of Cobb Hill Cheese has perfected this award-winning American farmhouse favorite.

-Shire Beer Cheese with Scottish Ale
Shire is the result of a collaboration with Hopshire Brewing in Dryden, NY. It is a cow’s milk cheese aged for 3 months. In the process of making Shire, the cheese curds are washed with Hopshire’s delicious Scottish Ale. The dark ale imbues the cheese with  toasty flavors of malt and coffee.

-Chevrotin

Seal Cove Farm in Lamoine, Maine make this aged, crumbly goats' milk cheese. The flavor is bright and clean, with a lingering fruity and slightly mineral finish. As the cheese ages, it is washed with salt water brine, giving its rind a slightly golden tinge of color. The flavor takes on sweeter, maltier notes as the cheese matures, making Chevrotin a bit of a shape shifter, intensifying with age. The wheels age anywhere from 3-12 months.

-Moses Sleeper

A bloomy rind cheese, the Moses Sleeper is a Brie-style that is aged 4-6 weeks. Its flavor is bright and savory with a buttery taste that takes on an aroma and flavor reminiscent of truffles, root vegetables and nutrient-rich earth itself. Developed by Mateo Kehler of Jasper Hill Farm, located in the Northeast Kingdom of Vermont, its name comes from Greensboro VT's local Revolutionary War hero.
