• Wischago - A nutty, fruity sheep's milk Manchego style cheese from Hidden Springs Creamery in Westby. During their 6-7 months of aging, Hidden Springs Wischago develops a rich, meaty flavor that is brightened by notes of fermented fruit and salt.
• Marieke Gouda - A caramel-sweet flavor, with a boast of dense, buttery texture and a pleasant grassy aroma. Cheese maker Marieke Penterman’s Old World recipe is made from raw cows’ milk and is brined for 60 hours, before being cured and aged on Dutch pine planks for 6-9 months.
• Ascutney Mountain - A sweet and nutty cheese, similar to European Alpine cheeses, Ascutney Mountain has a natural rind and a firm, yet creamy texture. It is made from raw and rich Jersey cows’ milk, and aged 8-10 months to develop its intriguing nature. Gail Holmes of Cobb Hill Cheese in Vermont has perfected this award-winning American farmhouse favorite.
• Shire Beer Cheese with Scottish Ale - A delectable collaboration with Hopshire Brewing in Dryden, NY. During the 3 month aging process, cheese curds are washed with Hopshire’s delicious Scottish Ale. The dark ale imbues the cheese with toasty flavors of malt and coffee.
• Chevrotin - A bright and clean flavor, with a lingering fruity and slightly mineral finish. Created by Seal Cove Farm in Lamoine, Maine, this crumbly goat's milk cheese is washed with saltwater brine as it ages for 3-12 months, giving the flavor a sweeter, maltier note.
• Moses Sleeper - A bloomy rind Brie-style cheese with savory and buttery flavors, taking on an aroma and taste reminiscent of truffles, root vegetables and nutrient-rich earth itself. Created and aged 4-6 weeks by Mateo Kehler of Jasper Hill Farm, located in the Northeast Kingdom of Vermont.
