Queso del Invierno ("Winter Cheese") is the brilliant creation of David and Cindy Major of Major Farms. This firm, nutty American gem comes to the rescue of the devoted followers of their iconic and highly coveted Vermont Shepherd, one of the most prized but oh-so-elusive cheeses in the country due to Major Farm’s ewes’ extremely short milking season. This shortage has been wonderfully remedied by twenty neighboring Jersey cows lending these sheep a hand, adding their rich, organic cow's milk to extend Vermont Shepherd’s season year round with this sister cheese.
Queso del Invierno is aged five to nine months. It has firm, nutty, piquant characteristics with flavors of butter, cream and salt but has a paler, golden interior due to the addition of cow's milk. 8 ounce package.
